sharpening w/ a hand rubbed finish

You're missing an important last step - stropping (IMHO, of course)

I did what you're talking about for a while, but finished with a "power strop", ie. leather belt.

If I use a buffing wheel, I have a sharp edge, but not anywhere near as sharp as when I use a leather belt on the grinder to strop....yikes!

1. How do you know what angle you are sharpening at?
2. Are you ABSOLUTELY certain the angle NEVER changes while you sharpen?
3. Are you rasing a good, even burr on both sides?

The buffer mounted felt wheel will not change anything on your edge, with the exception of knocking off the wire edge, and polishing it.
It serves the same purpose as stropping, but is faster, and, IMO better.
If your edge was angle sharpened, that's what it will be after. If it was convex sharpened, it will remain so.

You're not jamming the blade into the felt wheel here, just making TWO LIGHT PASSES, takes all of a few seconds per side.

When you hold the blade at a 45 degree angle, and make a light pass across a felt wheel, it doesn't even get the top of the edge bevel,
That's why the second light pass at about 30 degrees
