Hi my name is tyler and I'm planning to start a sharpening service but before I started i was wanting to know if I should wait until I get the supplies to do a mirror polished edge considering how popular they are or is even necessary I'm using a kme sharpener and right now I can get an edge hair popping sharp.
 
No, don't wait. As requests come in for mirrored edges, then you can procure the tools necessary for mirrored edges.
The majority of requests IMO, will be a sharp toothy edge. It would be beneficial to know what steels work good with a mirror edge and which ones are suited for a toothy edge.
Just because someone wants something that's looks cool, doesn't mean it's the right thing to do.
