Is there a way to sharpen knives with out making a new edge (i'm new to knives)

no - thats what sharpening is. but if you find out what degree your factory edge is (meaning the edge profile it comes out of the box with) you can continue to sharpen it at that same degree bevel so its kinda the same. my suggestion is to buy a spyderco sharpmaker because it comes with a very informative dvd and book that not only teaches you how to use the sharpener, but also kinda gives you an introductory to sharpening and what it actually is/does.
