Sharpest Knives?

What is the sharpest knife you ever received new? What is the sharpest knife in your collection today and how did you sharpen that knife?

For me the sharpest new was a William Henry EDC-10. The EDC-10 also gets super sharp with a SharpMaker and the ultra fine stones so its easy to keep sharp. Sharpest today would be my CRK 25. It's the sharpest because I just finished sharpening it on my Wicked Edge. I took it to 17 degrees per side and went up to 3000 grit before using the strops. Now my 25 will easily push cut paper and cut hair with ease. I am curious to see how the edge holds up at 17 degrees per side.
 
The sharpest knife that I ever got new was the mora companion. That thing was scary sharp. Sharpest today is my Opinel #8. I use a 24" strop and green paste to get that mirror edge.
 
Sharpest one is my thinned down Victorinox paring knife, sharpened last on a norton economy stone (silicon carbide or india, forgot which one I used) and some flexcut gold on a piece of paper to strop it.
 
Sharpest knife out of the box was a SOG Mini Vulcan. Right now it would have to be my Benchmade Pika 2, which I just grabbed by the open blade and absolutely cut my finger open. :p
 
Michal Gavac's knives come as sharp as any I've ever seen.

My sharpest knife right now is a Joe Calton chef knife. He finished it with a very coarse, toothy edge which has been stropped smooth over time. Now it is a slicing machine and holds its edge better than it did when I first started using it. It's basically a full flat grind with a blended convex edge, with, as Mike would say, a "nice and lean grind."
 
I've received some Spyderco knives that have been surprisingly sharp right out of the box.

The sharpest I have right now is my Shirogorov. They are a FFG to start. I then put that on my Wicked Edge and thinned the edge down to 15 dps. Took it through the whole procedure. Stopped at .6 micron ceramic. It is frightening sharp now. :)
 
My blue endura was the sharpest out of the box. Hair whittling sharp. What is my sharpest knife right now? All of them. :)
 
My benchmade mini barrage was super sharp but, my Ontario rat 1 was probably the sharpest. I dang near cut the tip of my finger off opening a letter and never felt anything but a little pressure and blood going everywhere, lol.
 
The sharpest i ever recieved was probably my spyderco southfork.

Right now the sharpest thing in my.inventory is probably a CS Recon 1. Its a scary thing at 7DPS and 0.025u (640,000 grit)

Do you have a purpose for that type of edge, or is it more or less just part of the quest for "perfection"? Also, how does AUS 8 hold up at that angle?
 
The sharpest knife I've ever received new is a small, thin Zubeng forge tamahagane fixed blade, with a light smoky hamon and a gentle convex to a zero degree edge grind. I prefer to carry and use a "toothier" edge grind for better feedback. Even with practical measurable magnifying-glass observable evidence, "Sharpness", in a practical sense, becomes a subjective thing to me.

Kiku Matsuda & Rockstead...dangerous sharp.....first time I holstered the Matsuda I guess I had it a little twisted and it sliced the leather sheath from top to bottom.

These knives have some serious convex.

These days I sharpen most of my folders on a W.E. it does some very nice repeatable edges...I can still throw down some serious edges with my belt...Jerry Hossom got me started with that.

Eh , just to carry around and show people what I can do. Makes quick work of basically everything. It has surprisingly good dimensional stability at that angle , but the steel has no abrasion resistance so the edge degrades relatively quickly , as AUS8 does.
 
Shun Sora 210mm Gyuto, that was sharper than any Mora I've gotten, and that says something! Right now my sharpest knife is my ZT 0566, and yes it is hair whittling! ;)
 
Sharpest from the factory was my spyderco resilience. First knife I ever touched that could consistently shave hair.
My sharpest now would be my Whaleshark. I used an edge pro and strops.

Thanks for the response, it's definitely interesting to see what steel can do when handled properly. I'd love to experience your edges, I feel like it would teach me (and humble me) quite a bit!
 
Sharpest out the box: Shun chef knife

Sharpest owned: BM Barrage. Sharpen on an Edge Pro with Chosera stones. M390 takes a nice edge.
