I use the 30 degree setting for all but my 2 work knives. I use an Edge Pro to set a back bevel if I want one. I usually go to about 12 degrees for the back bevel and then 30 for the microbevel. Most of my Spydies, though, haven't needed anything except touching up with the rods at 30 degrees.
I back bevel to about 8 degrees per side using a bench hone or a belt sander. I do my primary sharpening at 10 degrees per side by tilting the sharpmaker base to subtract 5 degrees from my honing angle. I finish off with a wisp of a microbevel by lightly stroking each side of the edge about twice on the medium rods and twice on the white rods at 15 degrees (the 30-degree slots). I have to be in an awful hurry before I use the 40-degree slots for anything.
