Just to clarify...I get the rotating the blade to keep the edge perpendicular, but you dont actually pull the tip off the hone? Or you make sure to pull it off when it is perpendicular? It doesnt seem like you would get the tip sharp if you don't pull it thru...and a lot of times I choke up on the blade and use the tip for detail work where its nice to have it good and sharp. Thanks!

Correct, if you pull it off the hone you will grind off the tip, you achieve the sharpening by pushing it down the hone. The stroke should end with the tip still on the hone. Now you have to pull the blade towards you in the beginning as otherwise you will only be sharpening a cm of the edge, just just stop once the tip is in contact with the hone.
