Sharpmaker Stones

So I have been using my Sharpmaker fairly regularly.

And I have noticed that the corners are no longer perfectly rounded, nothing you can feel with a fingertip, you need a fingernail to feel the variations.

When should I replace them?

You shouldn't have to replace them for a long, long, long time. If you are talking about feeling little bumps and irregularities on the triangular rods, try just rubbing the rods together lightly to smooth them out. Only rub them with the other one of the same grit. You may eventually be able to wear out the grey ones but if you wear out the white ones I'll be very impressed indeed. I hope this works for you.
