I have the original model sharpmaker, and have added the ultrafine stones. I do ok with it, on the knives that are already close to that angle. I have heard about the Ruby stones, but Im not sure which ones to get that will get a knife to the correct angle a little quicker, or to bring back the edge on a really dull knife. Which grits would be best for reprofiling?

It would depend on the steel but I think anything in the 100-200 grit range would make reprofiling a lot faster. You could also try buying a coarse 6 inch dmt diasharp for ~$25 and lay it against the flats of the stone and secure it with some tape. That's what I do and it makes reprofiling a breeze now.

Dont know about ruby stone but the Sharpmaker stones are actually a synthetic sapphire.
