If a knife carries a premium price it should exhibit premium quality. For $100+ I'd expect a centered blade and reasonably good F&F. My lefty Military came slightly off center but it's pretty close so that's fine imo. My Sage 2 and Gayle Bradley came very well centered. You can't really expect perfection unless you're paying big money for it, but I think any knife over $100 should have reasonably good F&F, which includes a more or less centered blade, even grinds, etc.
