Shun Santoku

I am looking for a Shun Santoku 7in with the scalloped blade. I have sen them listed for approx $125 +sh. Is this a good price? Also if any board members are Kershaw dealers etc then I would consider buying from them this way everybody eats.:D
 
The only scalloped santoku I'm familiar with is the Kaji Series found here.

As for a dealer, PM 2bkc. He's a member here and offers some very good deals. If you happen to see 2brothers on the forum, PM him.

I have the Elite santoku, and my son has the santoku, chefs, and pairing knives. Great pieces, and I've never had any problems with mater sticking to the blade.

Yes I believe the DM0718 is the one. Is the KDM0004 that much better? It is for home use but I would prefer to spend a little extra and get a better knife than settle. I was told Misono makes a very good Santoku but the reviews put the Shun just above it. I just didnt realize there were so many variations. I shouldnt be suprised I guess its the nature of knife collecting etc......So suggestions??
 
The only Santoku I have in Shun is the DM0702 which I won here in this sub-forum.
I have purchased others in the Classic line. 723 Chef's, 200 Carving set, 714 Veg and the 716 Paring.
Some of the etching has "washed" off a bit, nothing major.
I wash and dry it every time so I cannot comment on any rusting problems. I haven't seen any.
They keep a great edge and I use a ceramic rod to clean up the edge and a
steel to straighten back out again between uses.
I've very happy with them in their performance thus far. They've outperformed
the Henkels, Wustoff and Victorinox I had been using.

You can't go wrong with any of the Shun line, be it Classic, Steel or Elite.
Not to mention the Kaji or
Bob Kramer's work on his line of Shun "composed of an SG2 core (64-66HRC)
clad with true pattern-welded nickel and stainless steel Damascus"
(these are a Sur La Table exclusive)

Well don't I feel like a noobie...I had NO IDEA they were using SG2 in kitchen knives, sweet. That being said, I'm a bit disappointed in SG2 right now...I thinned one out really nice (22-26 inclusive or so) and got it crazy sharp. Opened a wine bottle with very light pressure, and the edge rolled way too easy, so I went back to 30 inclusive.

I have a KO Santuko on the way...I'm curious to see how it performs.
 
Not to take anything away from the Shuns but I hear MAC makes a very nice Santoku. I love my Shun Classic 8" Chefs knife and have had no problems other than a very small chip in the blade due to my poor knife skills and not being used to the very thin edge. Quite a difference between the battle axe grinds on European style kitchen knives.

Two words: cork screw. Either that or get some of that fine screw cap wine!
 
Senor DV...I cut the lead sealant off with the knife. Touching glass did the edge in...it rolled like a crackhead promised a rock.

If I didnt have a tool to get the cork out, I wouldve broken the top off of the bottle, not dug in with a $90 pocket knife...give a brother some credit :D
 
That would be correct.

It it doesnt come out of glass or doesnt have a natural cork, I shalt not imbibe :D

The same is ever MORE true of my Scotch and Bourbon.

There's some good wines that come with a screw cap. Kim Crawford Sauvignon Blanc comes to mind. A lot of good wines from New Zealand, in particular, come with the old twist off. Seems kind of trashy but the contents are anything but and you don't have to worry about getting a 'corked' bottle.
