I would contact Shun directly for a definite answer. Personally, I have found that many manufacturers will honor their previous warranties prior to their changing the terms. As far as refunding all or part of the purchase price, I would not get your hopes up!
I can understand a bad taste resulting from a company not wanting to honor their warranty. However, this is not necessarily the case here until you have verified it with that actual company. What is posted on a website or advertised is not always the final determination. Many times, a company is interested in overall cost control, but will make exceptions.
