Simple ways to stop the rust on the knife?

My grandfather used vaseline for 50 years on his blades in a thin coat.

Wash off before food prep, harmless stuff.

this is not rocket science.

Keep a rag with some johnson's wax on it in a plastic bag in your kit, it will go a long way towards blade maintenance. Low tech, easy on the budget and a simple solution. Carnuba wax is non-toxic, you have eaten it any time you have put chapstick on your lips.

Camellia oil is made from the camellia tree, which is a member of the tea family. You can get camellia oil at woodworking stores and natural personal care product suppliers.

It's used on hand tools to keep them rustfree, as it was for centuries on katana blades to preserve them from rust. It is also an oil used in cosmetics. There's a bunch of info on the web about it that Google will bring up for you.
 
Renaissance Wax is another great product for protecting blades.
