is the best steel for a hard working knife with the ability to hold a decent edge,

The knife will be used for hunting, fishing camping chopping an all around tuff knife. It will have an 8" blade

What would be the best steel?
 
1084 might work well for you. Relatively easy HT regimen with the ability to take a pretty good edge while retaining some decent toughness. Check out Aldo/NJ steel baron.
 
If you are making your own knives, I would recommend 52100.
