Made from 1095 high carbon steel, this knife features a single edge bevel, much like traditional Japanese sushi knives (just not nearly as long). The left hand side of the blade is completely flat all the way down to the edge, and the right hand side of the blade features a single edge bevel that goes all the way down to the edge. I did include a "micro-bevel" on the beveled side, just to make it easier when it comes to sharpening. The owner can sharpen it like a regular knife, but instead of sharpening both sides, you only have to sharpen one side, and remove the burr from the back side! Or, if the owner desires, they can easily remove the micro-bevel and sharpen the entire main bevel down to a "zero" edge. The blade steel was hardened and tempered to a nice, hard 65HRC for excellent edge retention. Prior to hardening, the steel was normalized and thermal cycled a few times for grain refinement, and also was given a "pre-quench" for even further refinement of the grain structure. The handle is a beautiful piece of Purple Heart, with a "D" shape favoring right hand use, but is equally comfortable in both hands.
