Siracha Substitute

Huy Fong Sriracha is scarce on the South Bay Area, checked several grocery stores and asian markets. I happen to be at my brother in law's yesterday in the east bay (Walnut Creek) and found some at the local Safeway.
 
Huy Fong is still available in stores here in Cleveland. But I just branched out with a Thai style sriracha called Shark brand. Very tasty, but it hits different. Doesn't have that up front heat/vinegar whack, instead you get a sweetness followed by a slower warm heat.

I have more than a few hot sauces/condiments in the fridge, in various styles, but don't care for the bazillion Scoville units stuff. YMMV.
I’ve had that before and it’s good, but it strangely tasted like fish to me. No idea why, but it was there every time I tried it. My buddy picked up on the fishy note too without me telling him, so it wasn’t just me.

Had Siracha on my Veggie Delite 6" at Subway this afternoon "GOOD" ~ I've been putting this stuff on my chicken a lot lately too, Hidden Valley Siracha and a little Hot Siracha Sauce on top ~ Pretty Good Stuff ~ Used it on Fish Tacos Too ~
