I forged this from 1084 high carbon steel and heat treated it in a digitally controlled furnace to a hardness of Rc58-60. Precise control of temperatures in the heat treating process assures a fine grain structure throughout the blade for edge holding and strength. This knife is extremely sharp and, will hold a fine edge and resharpen easily with a kitchen steel.
The handle of ambrosia maple that has been professionally stabilized which makes the wood dishwater safe.
Overall length is 9 3/4 inches with a 5 1/2 inch blade.
The blade is about 1/16 inch thick at the index finger and gradually tapers to the tip and edge.
