For a hidden tang, instead of using a mortise, why not cut a slot the length of the tang on the bottom of the handle, and glue a section of wood over the tang to cover the slot? Maybe a few dowels through the wood for support.

I wonder if anyone has tried that and if it would hold up under any stress.

Neat idea Dan. Some makers use a timber or micarta frame tang. Also have a look at how Randall do their 3/4 tangs. I think they are also referred to as rabbit tangs. A slot is cut for the tang to fit into, leaving the tang's spine exposed only. The end of the tang has a radius that matches the radius of the saw used to cut the slot, perfect fit.

Kitchen knives with simple handle shapes have been done that way for centuries. It is called a slot tang construction, or a 3/4 tang. Many use a slitting wheel on a mill to make the slot.
