Buck is mostly what I know in that line. There are also very thin blades among Kershaw. Just about everything else is flat, or even convex- damn you Scandinavians

The Medford Smooth Criminal is one of the best knives I've had recently. It's at 3" but it has a blade I think you'd be happy with.

I think a regrind is the way to go. I had a Boker Mini Kwaiken that I traded but before that I had Big Chris do a regrind on it here are some photos, note the below is not a for sale ad that is active.
