I've been experimenting with some mustard and vinegar finishes, and have been getting some pretty dramatic results. Not only is the finish neat, it helps with any kind of rust issues. It's made my carbon blades virtually maintenance free.

Specs:

Aldo's 1095- 3/16
OAL - 6 inches - 3in blade length
Peter's heat treat - 59-60rc.
Razor sharp chisel grind
Dramatic mustard patina on a very fine machine satin finish.
Forest green cord wrap - West System epoxied.
.095 thick boltaron/kydex sheath - Neck carry, or small tek lok compatible.

Haven't tried a hollow grind yet. I did a mustard finish on a tanto that Mike has (Thanks Mike!), and it turned out really cool too. I've tried this on a few of my carbon blades, and on an old Opinel. It really helps to protect the blade. Any carbon steel blade can be treated this way. I tried on an A2 blade and got some dramatic results.

Not trying to hijack this thread (but I'm doing that aren't I...). How do you get that patina with mustard and vinegar. I've only read about the gun blueing on here.

I'd be very appreciative if you could post a "how to" please.
