So you guys talked me into a Kershaw Shun...

I've considered buying one of these, but I wonder how much of my money is going towards a good kitchen knife and how much is going towards the art. I'm still on the fence about these.
 
I've owned the Shun Santoku for about a year, and just bought the KO Shun Chef's knife. I love the looks of the Onion, and the Santoku is very light. Both are beautiful, and sharp, sharp, sharp. I haven't needed to sharpen either one of them, yet. I think I have found my 2 perfect kitchen knives. My paring knife ends up being whatever I'm EDC'ing for the day.

i ordered one, Shun Kaji Hollow Ground 7" Santoku. will let you know when i get it!

i did see first it at Williams Sonoma as you guys suggested, but i didnt spend enough time with it to give an impression. all i can say is this is the most beautiful thing i've ever seen!
 
I'm glad you went with the santoku. I really think shun did a great job with that blade shape. I've never seen the Kaji before. very cool looking.
 
Kaji... you must see it. the Damascas is out of this world, it looks completely different from everything else i've seen. its so thin and tight. i spoke to the person who sold me the knife i ordered and was promised the best one out of 50, as the lines differ on every knife due to it being hand made. will keep you guys posted. might get it as soon as tomorrow.
 
keep us updated on your decision and post pics and a review if you get a chance. I too am interested in Shun knives.

The Shun line of knives have replaced all others in my home including HIGH end customs, mid range customs and all the cheap, mass produced German stuff.

The super gold is the heat... I love the large Onion design also. The handle feels insecure at first but it just takes a little getting used to. Love them, love them , love them.
