Regarding the video, I did watch it and I honestly have no idea what steel is used there, Carbon V, AUS 8 or even 3V, I got no idea. I also see lots of people in comments speculating about steel choice.

Ok, personal preference is personal preference. I have no problem sharpening either steels but I do find that in general burr removal is easier with carbon steels than stainless, so I can see your point. As for that video it was the Aus8 version of the SRK, which of course has been made in several steels.
