I have been using one of these in the kitchen for the last few months and it has become one of my most used blades. Fruit, veggies, meat, it doesn't really matter what it is, this type of knife can get most of it done. I based the blade off of the knife my Great-Grandmother used to carry around tucked in her apron a century ago.
Made from 0.07" 1084 hardened to 60HRC, this knife is 10" OAL. The wood is dark walnut.
