This Heavy Chef's knife has a 7" cutting edge, measures 12 1/4" in total length and is 1 7/8" at it's widest point. The blade is 1/8" thick 154CM Stainless steel, professionally heat-treated to Rockwell 59-60, including cryo treatment to -300°. The edge is polished and razor sharp. The body of the blade has a deep bead-blasted finish. Fine grind marks are visible at the edge of the bevel giving it a hand-made look. The handle is Linen Micarta and is fastened with hollow stainless steel pins. My maker's mark, A "K" for Kaiser, is stamped on the blade. This knife was designed for heavy cutting and chopping in the kitchen and in the field.
