Hey guys,
I've got a filet/meat carver up for sale here tonight. It has medium flex to it. It's 20CV stainless steel which is one of my favorite high end stainless steels. It has great edge retention and corrosion resistance. It's heat treated to RC61 including LN cryo. The handle material is micarta from GL Hansens and sons. It's absolutely tough as nails. I don't usually include a sheath with these but I made one for this particular one.
SPECS:
OAL: 11"
BLADE: 6" long, 1.3" wide. It has been hand finished to 600 grit. The grind is hybrid flat/convex which is down to 0.009" before sharpening.
STEEL: 0.1" CPM 20CV heat treated to RC61 including LN cryo.
HANDLE: GL Hansen's blue micarta
Sheath: Pouch style leather
