I'm offering this Japanese style gyuto tonight. The blade is 20CV heat treated by Peter's to RC61. If you're not familiar with 20CV it is first gen PM steel consisting of 1.9% C, 20% Cr, 1% Moly, 0.6% Tungsten and 4% Vanadium. It is highly corrosion resistant, will take a great edge and hold it very well. The bevels are full flat to 0.015" and then convex to near zero. It's hand finished to 400 grit for a satin finish. (I'm not sure how many more of these I'm going to hand finish, this steel laughs at all sand paper :) The Wa handle is stabilized Spalted Maple Burl and the ferrule is stabilized curly Mango. It weighs around 8 oz.

BLADE: 210mm (8.25") long, 48mm (1.9") heel height, distal taper, bevels full flat to 0.015" then convex to near zero. Hand sanded satin finish to 400 grit.
STEEL: 0.09" 20CV heat treated by Peter's to RC61
HANDLE: 135mm (5.375") Octagonal Wa handle with stabilized Spalted Maple Burl and curly Mango. Black and white G10 spacer.

I keep coming back to this, what an exceptional looking gyuto. Great steel too, catching on in the kitchen.
Nice to have something with good edge retention that you don't have to wipe off constantly.
