Hi all,
This one is now available just in time for the Christmas season. It's a very nimble CPM 20CV K-Tip gyuto that I've paired with exhibition grade stabilized Golden Amboyna from @Greenberg Woods. It's one of the finest pieces of handle material that I've ever worked with. The balance point is at the front of the ferrule and it weighs in at a hair under 6 oz. The geometry (compound flat/convex down to 0.006") , steel type (20CV) and hardness (RC61) are all designed for slicing and edge retention.

SPECS:
OAL: 355mm (14")
BLADE: 195mm (7.7") long, 49mm (1 15/16") heel height. The blade has been hand sanded to 600 grit. The grind is compound full flat/convex. The edge is down to 0.006" before sharpening. The spine and choil are rounded for comfort.
STEEL: 0.098" CPM 20CV stainless steel heat treated to RC61 including LN cryo.
HANDLE: Stabilized Golden Amboyna Burl with African Blackwood ferrule. Black G10 and natural micarta spacers.
