I've got a great little paring knife up for sale here tonight. The blade is 440C stainless steel and the handle is Australian Coolibah which is so beautiful it speaks for itself.
SPECS:
OAL: 8.5"
BLADE: 3.75" long, 1.0" wide. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
STEEL: 0.070" 440C stainless steel heat treated to RC62.
HANDLE: Australian Coolibah burl with Orange G10 and natural micarta liners and natural micarta pins.
