I've got a nice little paring knife up for sale tonight. It's 440C at RC60 hand finished to 800 grit. The handle material is stabilized Elm Burl that I got a while ago from Alpha Knife Supply.
SPECS:
OAL: 222mm (8.75")
BLADE: 105mm (4.25") long, 25mm (1") wide, full flat grind with slight convex at the edge which is near zero edge before sharpening. 800 grit hand sanded finish. The spine and choil are rounded for comfort
STEEL: 2.5mm (0.09") 440C at RC60
HANDLE: Stabilized Elm Burl, black micarta liners and pins.
