This is a symetrical convex grind 52100 Gyuto in oak / ebony / silver.
The knife has good food release. It is not laser thin, but not overly thick either, roughly .015 behind the edge. The tip is then and is great for slicing. This one was used for test cutting veggies, so may have some very slight blemishes.
The oak is a medullary ray grain pattern full of character and depth. The grain changes dramatically from top to side to bottom. The ferule is Macassar ebony, nicely grained. The spacer is .999 fine silver ingot slice. The handle shape is slightly large grip octogon classic style. The oak is fully stabilized and the ebony is finished with beeswax / mineral oil. Space has a satin finish which will probably polish well over time and use.
The 52100 should build a great patina if desired over the years. (Note: This is not stainless).
The blade is finished down to a 1200 grit burnish.
2.47 mm thick at the spine with full distal taper to a relatively thin tip.
198 mm blade length
133 mm Handle
355 mm overall length
47 mm height at heel
I am letting this one go at $185.00 plus shipping due to slight blemish on the blade. There is a hardly noticeable scratch near the handle from my handling in cut testing.
The first "I'll take it" gets priority.
Shipping is likely to be a little slow due to the season, but I will get it in the mail asap.
I'm a bit sorry this sold so fast. It was a great deal. I have another coming tomorrow.
Thanks for having a look!
