Hello everyone,
I have a couple of great chef knives up for grabs here. The first is a 8" gyuto and the second is a 7" Honesuki. They were designed as a set but can be purchased separately.
Both are 52100 carbon steel that was normalized and thermal cycled for refined grain. They ended up a solid RC63 after temper. The handle material is some really awesome Stabilized Two Toned Philippine Ebony Burl with gold resin and black linen micarta bolsters. The blades were hand sanded to 800 grit and taken down to 0.009" before sharpening.
SPECS:
Gyuto:
OAL: 330mm (13.5")
BLADE: 210mm (8.25") long, 50mm (2") heel height. It has been hand finished to 800grit. The grind is full flat with convex towards the edge which is down to 0.009" before sharpening.
STEEL: 2.5mm (0.098") 52100 carbon steel heat treated to RC63 including thermal cycling for refined grain.
HANDLE: Stabilized Two Toned Philippine Ebony Burl/gold resin hybrid with black linen micarta bolsters and black and white G10 liners.
