Hi all,
I have one of my modified Nakiri's up for sale here today. I've done an 8" version of this before and thought it would be great in a 6" version. The steel is 52100 heat treated to RC62 including thermal cycling to refine the grain. The handle material is beautiful K&G dyed and stabilized curly maple. This is going to be a great little kitchen workhorse.
SPECS:
OAL: 11.0" (280mm)
BLADE: 6" (150mm) long, 1.75" (45mm) heel height. It has been hand finished to 800grit. The grind is hybrid full flat/convex which is down to 0.006" before sharpening.
STEEL: 0.098" (2.5mm) 52100 carbon steel heat treated to RC62 including thermal cycling.
HANDLE: K&G blue dyed and stabilized curly Maple with black and white liners and black micarta pins.
