I have a couple of these French Chefs from my "Cutting Machines" series ready to ship!
These are made from .100" thick 52100 steel and have morado wood handles and are availabile in 17cm (about 6 3/4") and 21cm (about 8 1/4") blade lenghts. This wood is very resistent and matches perfectly the 52100 blade to make a tool that will last for generations.
The knives in this series are very spartan, no frills tools made for hard kitchen use day in, day out.
