Hi all,
Here's the latest off my bench. It's my Euro chef model in S35VN stainless steel. S35VN steel has a great blend of good edge retention and corrosion resistance. The handle material is really amazing stabilized, dyed cedar burl. I wish I had more of this stuff, it's beautiful stuff.
SPECS:
OAL: 320mm (12.5")
BLADE: 185mm (7.375") long, 48mm (1.875") high. It has been hand sanded to 600 grit. The grind is hybrid full flat/convex which is down to 0.007" before sharpening.
STEEL: 2.5mm (0.098") CPM S35VN stainless steel heat treated to RC62.
HANDLE: Dyed, stabilized Cedar burl with black and natural liners and black micarta pins.
