Hello all,
I've got one of my Euro chefs up for sale here today. The handle material is some awesome stabilized Curly Sweet Gum from
Greenberg Woods
. The AEB-L is heat treated to RC62 including LN cryo. It's going to be a great all around kitchen blade.
SPECS:
OAL: 12" (305mm)
BLADE: 7" (178mm) long, 1.95" (48mm) heel height. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
STEEL: 0.098" (2.5mm) AEB-L stainless steel heat treated to RC62 including LN cryo.
HANDLE: Stabilized Curly Sweet Gum with natural micarta and white G10 liners and bronze pins.
