Hi all,
I've got an 8" gyuto up for sale tonight. It's AEB-L stainless steel in some gorgeous and rare Philippine Ebony Burl with Brazilian Ebony, black and white liners and black pins. This is a great all around sized kitchen blade that is balance right at the front of the bolsters. The handle material polished up like glass.
SPECS:
OAL: 13.0" (330mm)
BLADE: 8" (205mm) long, 1.875" (48mm) heel height. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
STEEL: 0.10" (2.5mm) AEB-L stainless San Mai steel heat treated to RC62.
HANDLE: Philippine Ebony Burl with Brazilian Ebony bolsters and black and white liners and black micarta pins.
