Hi All,
I have a couple of excellent kitchen knives up for sale here today. The first is an 8" Eurochef and second is a 7" Nakiri Mod. Both are made with Wolfram carbon steel which has added Tungsten for better edge retention. It has prominent hamon and another cool effect called "alloy banding." Alloy banding looks like scratches but they are segregated alloys that show up with etching. The handle material is K&G stabilized curly Acacia which is a close cousin to Koa. It is every bit as beautiful and chatoyant. The liners are black G10 and natural canvas micarta.
EUROCHEF SPECS:
OAL: 13.0"
BLADE: 8.0" long, 2.0" heel height. It has been hand finished to 800 grit and then etched with FeCl. The grind is hybrid full flat/convex which is down to 0.006" before sharpening.
STEEL: 0.10" Wolfram carbon steel heat treated to RC63.
HANDLE: K&G stabilized curly Acacia with a black G10 and natural micarta liners and natural micarta pins.

NAKIRI MOD SPECS:
OAL: 11. 5"
BLADE: 6.75" long, 2.9" heel height. It has been hand finished to 800 grit and then etched with FeCl. The grind is hybrid full flat/convex which is down to 0.006" before sharpening.
STEEL: 0.10" Wolfram carbon steel heat treated to RC63.
HANDLE: K&G stabilized curly Acacia with a black G10 and natural micarta liners and natural micarta pins.
