Something new to my expanding collection of available designs. This chef's knife has the same great design of my high carbons but in easy to care for stainless.
Specs:
Steel: AEB-L HRc: 61
OAL: 10 3/4" Blade: 6"
Thickness: 1/8"tang, 3/32" at the spine of the heel, 1/32" tip
Width: 1 1/2" heel Handle: 4 5/8"
Palm Swell Thickness: 3/4" Handle Width: 7/8"
Choil: 1/2" Rounded Spine
The handle is made from a yellow and black G10 bolster, black g10 spacers set as a dovetail, completed with Osage Orange. All is complimented with 1/4" diameter brass pins.
The black Kydex sheath will protect the edge if it happens to be thrown in a drawer, or taken with you to insist on carving the holiday turkey.
Full flat grind and sharpened to 20 degrees per side using the Lansky diamond system.
There is a slight gap between the bolster and spacer that can be seen in the picture of its logo side. Purely aesthetics. Blade Bond is holding these scales together, so I have no worries of separation.
SOLD I'd like $150, but will part with this one for $140 due to the gap. SOLD
