Both knife feature hard AEB-L blades, attractive, grippy and comfortable micarta handles, very thin cutting geometry, and radiused spines and finger guards for high end comfort, ergos and performance.

Price is via PayPal G&S (I will provide the email address in private messaging) and includes expedited shipping with full tracking and insurance.

EDChef
Specs:
Steel: AEB-L
Hardness: RC 63
Stock Thickness: 1/8"
Overall Length: 8"
Cutting Edge: 4"
Geometry: Full flat/convex, zero ground, 20° toothy microbevel, caliper actually reads 0.00 mm behind the edge*! - cuts aggressively, and glides though material exceptionally well, even better than the larger chef.
* For reference, .1 mm is the minimum it can read, and that translates to .0039" behind the edge. So that means this knife is less than that behind the edge. I always get a caliper reading in mm, and convert to inches for the sake of the community who mostly use inches for this measurement.
Weight: 4.6 oz
Handle: Black paper micarta liners, black and red linen micarta, white G10 pins
Asking SOLD
