Hi all,
I have this laser gyuto up for sale here today. It's very light in hand with a balance point just ahead of the bolsters. It weighs in at 200 grams (7oz) The handle is beautiful stabilized Australian Silky Oak that has some nice metallic luster and the Honduran Rosewood Burl has some fantastic figure.
SPECS:
OAL: 350mm (13.75")
BLADE: 225mm (8.75") long, 47mm (1.8") heel height. The blade has been hand sanded to 800 grit. The grind is compound full flat/convex to aid in food release. The edge is down to 0.007" before sharpening. The spine and choil are rounded for comfort.
STEEL: 2.5mm (0.098") AEB-L stainless steel heat treated to RC62 with cryo.
HANDLE: K&G stabilized Australian Silky Oak with Honduran Rosewood Burl bolsters and Black G10 liners/spacer and black carbon fiber pins.
