Hi all,
Is it a Nakiri? Is it a mini cleaver? I don't know so I'll go with "Minikiri"
It's AEB-L steel heat treated to RC62 including LN cryo treatment. It's a compound full flat/convex grind that's thin behind the edge at 0.006". It's hand sanded to 600 grit. The handle is K&G black dyed and stabilized curly Koa. The pins and liners are natural micarta. This would make a great addition to your stable of kitchen knives.
SPECS:
OAL: 9"
BLADE: 4" long, 1 7/8" heel height. The blade has been hand sanded to 600 grit. The grind is compound full flat/convex. The edge is down to 0.006" before sharpening. The spine and choil are rounded for comfort.
STEEL: 0.098" AEB-L stainless steel heat treated to RC62 including LN cryo.
HANDLE: K&G black dyed and stabilized curly Koa, natural micarta pins and liners.
