Hi all,
I've got a great addition to your kitchen arsenal here. It's a 6" AEB-L Nakiri that's fitted with some gorgeous K&G stabilized Curly Tasmanian Blackwood. The liners are black G10 and the pins are bronze that have been peened. The AEB-L is heat treated to RC62 including LN cryo treatment. It was thinly ground down to 0.006" before sharpening and it's tapered distally making it well suited for your veggie slicing needs.
SPECS:
OAL: 280mm (11")
BLADE: 150mm (6") long, 50mm (2") heel height. It has been hand finished to 800grit. The grind is full flat with convex towards the edge which is down to 0.006" before sharpening. It's ground with distal taper.
STEEL: 2.5mm (0.098") AEB-L Stainless steel heat treated to RC62 including LN cryo.
HANDLE: Stabilized Curly Tasmanian Blackwood. Black G10 liners and bronze pins.
