Blade: 5" long cutting edge, made from AEB-L stainless steel hardened to 58 HRC.
Handle: Traditional octagonal shape, made from Cocobolo wood with a darkened, peened copper bolster, with an heirloom fit. This was my first time darkening copper on a handle, and I absolutely love how it came out!
Overall length: 10-1/2" (265mm)
Height: 1-1/4" (35mm) tall at the heel
Thickness at the tang: 0.084" (2.15mm)
Weight: 3.95oz (112g)

Honesuki knives are a Japanese style of boning knife that work well for breaking down chickens, and other small poultry and fish. But they also come in handy for lots of other cutting situations where you need a small nimble blade that can stand up to a little bone contact without worrying about chipping the blade.
