Blade: 5" long cutting edge, made from AEB-L stainless steel hardened to 58 HRC.
Handle: Traditional octagonal shape, made from Cocobolo wood with a darkened, peened copper bolster, with an heirloom fit. This was my first time darkening copper on a handle, and I absolutely love how it came out!

Honesuki knives are a Japanese style of boning knife that work well for breaking down chickens, and other small poultry and fish.
