Good afternoon. Thanks for taking a look at my sales thread. I have a petty chef available.
I call it my Assassin petty model. This knife is a kitchen assassin , plain and simple. I have been making this design for a few years. This is my latest rendition.
Sporting a 6.5" x 1.5" blade in 1/8" thick Bohler Uddeholm AEBL steel.
This knife has a full distal taper and was hardened by Jarod Todd to 62-63 RC with cryo temper.
I have admired the work of fellow Massachusetts maker Graydon Decollibus for awhile now.
We teamed up on a few of these knives. He did the handle work. This one is Curly Maple with a black wood ferrule.
