Case stag Sowbelly with CV blades, I have cleaned up the blades and bolsters and thinned down the main blade as it was quite thick behind the edge, using sand paper which took an inordinate amount of time. And all three blades have great walk and talk with no blade play. All three blades are razor sharp by me.
I guess I am not a CV guy so I will just stick with stainless, maybe find a nice custom Sowbelly one day...
