Chef is Aldo's 1084 with 8.25" edge and about 13" overall. 1/8" spine thickness. Blade is 2.25" wide at heel. Pink G-10 scales with aluminum pins.
Parer is Aldo's 1095 with 3.25" edge and about 7" overall. 1/16" spine thickness. Pink G-10 and ebony scales with copper pins.
Heat treated in house. G-Flex Epoxy used for all the gluing.
Block is custom too.
This set was intended as a gift that never came to fruition. I think this is a cool set that would make someone very happy.
