I am excited to offer this one here as it's been a while since I had an EDChef to put on the exchange. Here is one with a comfortable and attractive composite handle, super thin grind, and ergonomic radiused spine. The EDChef is a good size to handle kitchen paring and utility tasks, and I have had customers tell me that despite its smaller size, they use it even for tasks that would normally go to a larger knife.
Please note, this knife is not dishwasher safe, and should be washed by hand with a damp soapy cloth, then rinsed and dried thoroughly. It is a carbon steel, so it should be expected to develop a nice patina with time.
Specs
Steel: 15N20, tempered at 375°
Geometry: Full flat, zero grind with a 20/15° compound microbevel
Overall Length: 8"
Cutting Edge Length: 4"
Weight: 3.7 oz
Handle: Blue and black layered G10, black G10 bolster, paper micarta liners, and brass tubes
SOLD, via PayPal G&S to the email address I will provide in private messaging (not the one in my sig). Includes tracked, insured expedited North America shipping. Will ship internationally with additional cost. First to post "I'll take it" gets priority.
Thanks for looking!
