Hey guys! Here is a design i have been wanting to try for a while!

This knife is part of a small run of 10 units im doing, this is the first one i finished! After this one is sold, contact me for getting in the queue for one.

In my opinion, it has a perfect balance between japanese and western aesthetics. It has a 150mm/6in blade out of n690 steel ground to perfection. Hardened to 59~60hrc

"Honesuki is specifically designed for de-boning and breaking down poultry, but many people have found the knife is also capable of filleting fish and red meat, or carrying out many of the tasks."

Honesuki in my opinion is also an amazing knife to process meat as a filleting knife, my favorite feature of it is that the blade is not as flex as western filleting knives. It is rigid, something that at least or my taste is better.

Im offering nice handle options: kingwood, ebony, stabilized maple, arizona ironwood etc.

I got at the very moment kingwood and ebony available, which are my favorites.

b9.jpgb8.jpg I take geometry on my knives really serious, as you can see, it is slight convex which will be absolutely perfect for slicing meat of any kind, as well making the blade a bit more bulky for chicken bones and such.

handle material: arizona ironwood, ebony, kingwood, stabilized maple in many available colors, exotic materials like mammoth fossil and stabilized coral reef, stabilized bog oak.

Blade was hand sharpened to 1000 grit, honestly i dont think you need more than this to process meat. It has a very smooth distal taper towards the tip but not enough to make it flex, blade is rigid as i designed to be.

I’m hoping that you stay around long enough to get the same feedback fro this forum also, once you get a few of your creations into the system and used I’m sure the remarks are going to be the same.
 
Just got the first batch of blue 2 steel from japan. Got the last 2 spots of this small run. Aogami super already sold out.
