Up for your consideration is the last pair of Black Canvas Gatsby with the well received "bright stonewash" finish.
Blade is Bohler M390 heat treated by Stack Met
4.5" Blade length
8.5" overall
.875" tall at the plunge
Fasteners are custom made 416SS Corby's that have been ground down.
I designed this profile to be used for steak but it has worked well for many things around the kitchen, very universal tool.
Thin edge, .008" behind the sharpened blade, holding a very good edge.
Black Canvas handles with maroon liners
