Hello, my friends!
This is the first chef I bring to BF and problably the first of many... it was great to do this model.
It's a GOMAI, with 1070 on core, random damascus (1070+15n20) on sides and this shine line between the layers is a SS 304.
The 8sized grip is a stabilized tamarindo spalted, with a little piece of ebony.
There is no phosphate in this piece, just coffee.
The grind is verry agressive without losing the resistance required for a slicing piece - almost a full flat (I know there is a convex at the end, because I made it
, but it is almost imperceptible to the touch).
190g with the center of balance 2" foward guard - Of course, we are talking about 240mm of cutting egde.
OAL: 370mm
Blade: 240mm
Width: 43mm
Thickness: 3mm
