to end thé week, here is a gyuto Injust finished with a 21cm (about 8 1/4”) long, chisel ground, sellectivelly hardened 1095 steel blade and a very nice octagon handle made of two very contrasting materials: a piece of golden, tri dimensional figured monkey’s ear wood that is fully striped with a détail in coal like dark gray stabilized bog oak.
